If you haven’t baked with honey before, it’s a great substitute for sugar. These honey cookies are beautifully soft and chewy. The fresh sprigs of thyme add a nice flavour to compliment the honey.
Makes : 16 – 18 cookies
1 1/4 cups all-purpose flour
1 tsp baking soda
1 Tbsp fresh thyme leaves
1 stick unsalted butter, softened
1/3 cup light brown sugar
1 large egg
1/4 cup honey
Preheat oven to 350°F and line baking trays with parchment paper.
In a medium bowl, mix the butter and brown sugar until blended. Beat in egg and honey until combined.
Mix in the dry ingredients until well blended.
Drop Tablespoon sized dough balls into your parchment paper and keep them 2 inches apart as they will spread when baking.
Bake for 10 – 12 minutes until golden. Remove and cool.
