Date + orange oatmeal bars

This recipe is inherently gluten free and contains mainly oats. It's a quick and easy oatmeal bar bake, though it is moist. It's got a ton of fibre packed into it and it's not very sweet at all. Probably one of my favourite bakes for breakfast or a quick healthy snack.


Makes 1 8x8 inch pan


Ingredients

2 cups quick oats (Gluten free if preferred)

3/4 cup brown sugar

1 1/2 tsp baking powder

2 large eggs

1/2 cup oat milk (or nut milk)

1/4 cup unsweetened apple sauce

1 tsp vanilla extract

1/3 cup chopped dates

zest of 1 orange


Directions

  1. Preheat oven to 350°F and line an 8x8inch square baking pan with parchment paper

  2. In a bowl, add the sugar with the orange zest using your fingers to gently massage them together.

  3. Add in the oats and baking powder and mix.

  4. Add in eggs, milk, applesauce, vanilla extract and continue to mix. Add the chopped dates and fold them into the batter.

  5. Add the batter into the prepared pan and spread it evenly throughout.

  6. Bake for 33-35 minutes and cool before serving.

Can be stored at room temp for 2-3 days and in the fridge for up to 5 days.
