Gluten Free Ginger Cake recipe
I've loved this cake for as long as I can remember because it's easy to bake and only requires one pan. It's got a lot of spice and depth of flavour. It's moist and the perfect holiday bake.
This recipe is gluten free but you can use the exact same ratios for a non gluten free cake.
Makes 1 9x9" cake
1 1/2 cups GF flour (with xantham gum)
1 tsp baking soda
1/4 tsp salt
2 tsps ground ginger
1 tsp cinnamon
1/4 tsp ground cloves
1/4 cup melted butter
2/3 cup dark brown sugar (1/2 cup for less sugar)
2/3 cup molasses
2/3 cup boiling water
1 large egg
Preheat oven to 350 F.
Grease a 9 inch square pan with butter.
In a bowl, whisk together all the dry ingredients and then set aside.
In a larger bowl, whisk the melted butter, brown sugar, molasses and boiling water. Let the mixture cool down a bit and mix in the egg.
Mix the wet and dry ingredients and mix well, until there are no lumps.
Pour the mixture into the pan and bake for 35 minutes. The edges should darken and the middle will be firm to the touch. Let it cool and then cut it into 16 or more pieces and enjoy!
I do want to make a note that the cake is slightly sweet and you may want to reduce the sugar content if you prefer less sweetness.
