Chocolate Strawberry Chip Cookies

I love a double chocolate cookie but I love them even more with freeze dried strawberries. This cookie recipe gives you the semi sweet chocolate chip, a chocolate cookie and a hint of tartness from the strawberries. You could even be bold like me, and use mint chocolate chips. I know, I know, it might seem like an odd combination but it works - and I like it. But if you don't love mint, stick to regular chocolate chips or white chocolate chips. The texture of these cookies will be similar to an ice cream sandwich cookie.


Makes about 20 cookies



Ingredients

1/2 cup unsalted butter, softened

1/4 cup granulated sugar

1/2 cup brown sugar

1 large egg

1 tsp vanilla extract

1/4 tsp salt

1 1/4 cups all purpose flour

6 Tbsp unsweetened cacao powder

1/2 tsp baking soda

1/4 cup chocolate chips (mint, regular, semi sweet, dark or white chocolate)

1/4 cup freeze dried or dried strawberries in small chunks


Directions

  1. Preheat oven to 350°F and line a baking tray with parchment paper or silicone mat.

  2. Add butter and sugars into a bowl and mix.

  3. Add egg, vanilla extract and salt and mix well.

  4. Mix dry ingredients separately in a small bowl. Then add to the wet mixture and combine.

  5. Add in the chocolate chips and freeze dried strawberries. Save a couple of strawberry chunks for the top of the cookies.

  6. Drop tablespoons of dough onto the prepared sheet. Bake for 9 - 11 minutes until tops are dry and cookies are puffed up.

  7. Let cool and enjoy!
